Chardonnay Trentino DOC – 2017
Our Chardonnay vineyard is located on the border with South Tyrol, where in 1960 about 3200mt2 were planted. About 18 Htl and 2400 bottles are produced.
The grapes are harvested in 2 separate periods: early and late, late August and mid-September.
The grapes are harvested exclusively in the morning before 10.30, in 15kg crates; by 11 am the pressure of the grapes begins in the lung press.
Selecting the most mature grapes, the first harvest is entirely fermented in wood, in new 500lt tonneaux, at low temperatures (below 18 ° C) for about 12 days. Once fermentation is over, it rests in steel on the fine lees until February.
